Made with sunflower seeds, sunbutter is an excellent source of vitamins, including the heart-healthy antioxidant vitamin E, B vitamins for energy, plus magnesium for bone health. Sunbutter is also a good source of healthy fat and fiber, and contributes a deliciously nutty flavor to this smoothie.
Makes 2 (10-ounce) servings
Prep time: 5 minutes
½ cup of rolled oats, 1 cup of unsweetened apple juice
2 tablespoons unsweetened sunbutter
1 apple, peeled, cored, and finely chopped
¼ teaspoon ground nutmeg, 1½ cup ofs nondairy or dairy milk of choice
½ cup of plain, unsweetened nondairy yogurt
½ teaspoon vanilla extract and ¼ cup of crushed ice (optional)
- Put the oats in a blender. Process with 20 to 30 (one-second) pulses, untilfinely ground.
- Add the apple juice, sunbutter, apple, and nutmeg, and blend until smooth,about 2 minutes.
- Add the milk, yogurt, vanilla, and ice (if using), and blend for anotherminute, or until smooth, stopping the blender if needed to scrape down the sides so everything is fully incorporated. 4. Pour into two glasses and enjoy.
