This smoothie tastes like dessert in a cup of, but it’s actually reasonably low in sugar and bursting with the flavors of blueberry and vanilla. The oats add a nice, hearty touch to the smoothie, so it makes a great meal replacement packed with antioxidants.
Makes 2 (10-ounce) servings
Prep time: 5 minutes
¼ cup of rolled oats and 2 cup ofs nondairy or dairy milk of choice
2 cup ofs fresh or frozen blueberries
½ cup of plain, unsweetened nondairy or dairy yogurt
½ teaspoon vanilla extract
¼ teaspoon ground nutmeg and ¼ cup of crushed ice (optional)
1. Put the oats in a blender. Process with 20 to 30 (one-second) pulses, until finely ground.
2.Add the milk, blueberries, yogurt, vanilla, nutmeg, and ice (if using), and blend until smooth, 2 to 3 minutes, stopping the blender if needed to scrape down the sides so everything is fully incorporated.
3. Pour into two glasses and enjoy.
